  • 1= Large Eggplant, Aubergine
  • 2= Tbsp. Olive Oil
  • 3= Tbsp. Water
  • ½= Tsp each Coriander Powder
  • ½= Tsp each Cumin Powder
  • ½= Tsp each Garam Masala
  • ½= Tsp each Turmeric Powder
  • ½= Tsp each Garlic Powder
  • ½= Tsp each Ginger Powder
  • ½= Tsp each Red Chilli Powder
  • 1= Tsp each (Black Pepper / Salt)
  • 1= Tbsp. All-Purpose Flour | Maida
  • 1= Tbsp. Gram Flour / Chana Flour

PROCEDURE

  1. Take eggplant and cut off the back end and front end (you just need) to cut a little bit.
  2. Cut the eggplant as size not too thin or not too thick that is a perfect size.
  3. Take a bowl and add all spices such as cornstarch, gram flour, all-purpose flour, salt, black pepper, red chili powder, ginger powder, garlic powder, turmeric powder, garam masala, coriander powder, cumin powder and mix it.
  4. Bring olive oil and water in the bowl and mix it well and make a bit thin for that use water as required.
  5. Now bring the pieces of eggplant in bowl one by one and coat them nicely with that mixture.
  6. After coated all eggplant pieces let it sit on the counter-top for 10-15 minutes.
  7. Start the gas keep it on medium flame and add little amount of olive oil just make sure the base is all covered. Eggplants are marinated a layout eggplant.
  8. Once we lay out all our eggplants then cook them for 2minutes on one side and then we are going to turn them over and we are going to cook for one minute now turn them over.
  9. Cook them on a slow flame and they become really crispy and test very well now cook for one minute now turn them overdo it for 6 - 8 times until it cooks well and once its cook well turns off the flame and it will be done.
  10. Now serve it hot with family.
