In this article am sharing with you 3 types of Pulao. It seems to many people that the pulao and biryani are like the same but there is nothing like that. There is a lot of difference between biryani and pulao. We use more vegetables in Pulao like carrots, onions, peas etc. While in Biryani we add more spices. So today I have come here to bring you the method of making 3 Types of Pulao.

1. TAWA PULAO

Ingredients for Tawa Pulao

  • 2 cups cooked basmati rice (long grained rice)
  • ½ Teaspoon cumin seeds
  • 1 medium sized onion (finely chopped)
  • ½ tablespoon ginger-garlic paste
  • 1 green chili, finely chopped
  • 1/3 cup carrot, finely chopped
  • 1 large tomato, finely chopped
  • 1/3 cup green peas (fresh) or frozen
  • 1/2 tablespoon pav vegetable masala
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon red chilly powder
  • 2 tablespoons finely chopped coriander
  • Salt, according to taste
  • 11/2 tablespoon oil
  • chopped onion and lemon (for decoration)

PROCEDURE

1st Step:-

Boil chopped carrots and green peas Until they become softened in salted water. It will take about 5-7 minutes. Filter more water and leave them in the bowl.

2nd Step:-

Heat oil over medium flame in a non-stick wok. Add cumin seeds and let it crack. Now add finely chopped onion and fry it becomes until light brown.

3rd Step:-

Add ginger-garlic paste and green chilies and fry for 25-30 seconds. Add chopped tomatoes and roast it until it becomes soft and fry for about 2 minutes.

4th Step:-

Put boiled peas and carrots and mix well and cook for one minute. Now add Pav Bhaji Masala, Turmeric Powder, Red Chilli Powder, and Salt. Mix well and cook for one minute. Now add the cooked rice in it.

5th Step:-

Slowly mix the mixture and mix the mixture well until the spices look good on all the rice. Now, close the gas and take the tava pulao and put it in a serving plate. Serve with chopped coriander and curd.

2. TOMATO PULAO

Ingredients for Tomato Pulao

  • 2½ -3 cup boiled rice (cooked plain rice)
  • 1 pinch of asafoetida
  • 1/2  teaspoon mustard seeds
  • 1 medium onion, finely chopped (about 1/2 cup)
  • 1 green chili, finely chopped
  • 5-6 Curry leaves
  • 2 large tomatoes, finely chopped (about 2 cups)
  • 1 teaspoon red chili powder
  • 1 pinch turmeric powder, optional
  • 4 tablespoons finely chopped coriander
  • 1½ tablespoon oil
  • salt to taste


Ingredients for Powder

  • 1/2 teaspoon gram dal
  • 1/4 teaspoon Urad Dal
  • 2 Tablespoon dry coriander seeds


PROCEDURE

1st Step:-

To make masala powder, we have to roast the gram dal, dry coriander seeds, and urad dal. If gram is more balanced than roasting of other ingredients, then first pour gram dal in a small pan and roast for 2 minutes. Put urad dal and coriander seeds in it and till all the sweet smell comes together and the dal becomes light brown until roasted.

2nd Step:-

Put them in a plate and let it cool for a few minutes. Grind them finely grinding them in a small jar of a mixer grinder. Cut the tomatoes and onions finely.

3rd Step:-

Heat oil over medium flame in a pan. Add asafoetida and mustard. When the seeds begin to sprout, add finely chopped onions, curry leaves, and green chilies. Roast onions until light pink now put chopped tomatoes and salt (salt only for tomatoes). Roast till tomatoes become soft. Add red chili powder and turmeric powder. Now mix it well Now add spice powder (prepared in step 2). Cook with for one minute. Now add finely chopped coriander and mix it well and let it cook for 1 minute.

4th Step:-

Now add cooked rice and salt. If you put salt in the rice while cooking, then do not add salt again. Now mix them well so that all rice grains are covered with masala. Give the ripen for 2-3 minutes. Prepare to serve tomato pulao now.

3. SOYA CHUNKS PULAO

For 3 Peoples

Ingredients for Soya chunks Pulao

  • ½ cup basmati rice (long grains)
  • ½ cup soya chunks
  • ¼ cup finely chopped carrots
  • ¼ cup green peas (fresh or frozen)
  • ½ teaspoon cumin seeds
  • 1 small piece of Bay leaf
  • 2-3 black pepper
  • 1 small piece of cinnamon
  • 2-3 cloves
  • 1 medium onion (finely chopped)
  • 1 green Chili (finely chopped)
  • ¼ teaspoon turmeric powder, optional
  • 1¼ cups of water
  • Salt
  • 1 tablespoon oil or ghee
  • 2 tablespoons finely chopped coriander, to decorate


PROCEDURE

1st Step:-

Wash the rice 2-3 times with water and soak it in water for 15-20 minutes. Now wash the soya chunks also with water and soak them in warm water for 15 minutes.

2nd Step:-

After 15 minutes, the soya chunks will flatten and almost double in size. Remove excess water and wash them again with water 2-3 times. This will Decrease smell of raw soybean.

3rd Step:-

1 Heat oil or ghee in medium flame in a non-stick pan. Add cumin seeds, bay leaf, black pepper, cinnamon and cloves. When cumin seeds begin to become golden, add chopped onions and green chilies and roasted till the onions become light pink.

4th Step:-

Insert the chopped carrots and pour green peas and roast for 2-3 minutes. Remove excess water from the soaked rice and put them in the pan. Now add soya chunks and turmeric powder. Mix well and cook on medium flame continuously with a spoon.

5th Step:-

Now add 1¼ cup of water and salt according to taste. When the mixture starts boiling, reduce the heat. Now cover the pan and let it cook for 10-12 minutes. Do not open the lid in the middle otherwise, the rice will not cure properly.

6th Step:-

After 10 minutes, turn off the gas and let the rice remain covered for at least 7-8 minutes. After that remove the lid and gently mix the rice. Now soybean is ready with vegetables. Put it in a serving bowl and decorate it with fresh green coriander.

7th Step:-


Now soya chunks pulao is ready to serve.
