Ingredients

  • ½ Cup low sodium soy sauce or tamari
  • 2 Tablespoons honey
  • 2 Tablespoons olive oil
  • 2 Large cloves garlic, minced
  • 2 Large skinless and boneless chicken breasts (cut into chunks)
  • ¼ Cup olive oil
  • 1½ Tablespoons honey
  • 2 Tablespoons rice vinegar
  • ¼ Teaspoon salt (or add as per your taste)
  • Pinch of red pepper flakes (or add as per your taste)
  • 4 Cups romaine lettuce (chopped)
  • 2 Cups thinly sliced red cabbage
  • 1 Large carrot, peeled and cut into matchsticks
  • 1 Medium red bell pepper (thinly sliced)
  • ½ Cup thinly sliced green onion
  • ½ Cup fresh cilantro (chopped)
  • ½ Cup sliced almonds
  • 1 (10 ounces) can mandarin oranges (drained)

PROCEDURE

1st Step:-

Take a small bowl and whisk together the soy sauce, honey, olive oil, and garlic. Then add the chicken pieces to a large Ziplock bag, then pour in the marinade. Now seal the bag then use your fingers to mix everything together. Now the chicken marinates while you prep the dressing and salad components.

2nd Step

Taka small bowl and add all the ingredients for the dressing. Whisk to combine and set aside. Take a large bowl, add the romaine, cabbage, carrot, bell pepper, green onion, cilantro, almonds and oranges. Set aside.

3rd Step

Take a large non-stick skillet over medium or medium-high flame heat. When it becomes hot add the chicken pieces to the pan, along with most of the marinade from the bag. Toss to coat then cook for about 5 minutes or until cooked through. 

4th Step


Now just remove the chicken from the pan with a slotted spoon and let cool for about 5 minutes. Add to the Large Bowl. Now pour in the desired amount of dressing and toss to combine. And serve it immediately.
